Today I have my take on the 'Lemon Oatmeal Squares' I hope you enjoy:
Ingredients:
- 3/4 cup of lemon juice
- 1 egg
- 1 tin of sweetened condensed milk
- 1 packet of cookie/biscuit mix
- 1 cup of oats
- 3/4 cup unsalted butter
Method:
- Preheat oven to 240 degrees,
- Combine oats, cookie mix and butter into a bowl and with a fork or pastry cutter cut the butter into the mixture,
- Crack and beat the egg in a cup and combine,
- Once combined half the mixture and place one half into a pre-greased baking dish and bake for 10 minutes until golden brown,
- Whilst thats baking, take a separate bowl and add your tin of condensed milk and 3.4 cup of lemon juice and stir until combined,
- After 10 minutes take oatmeal base out of oven and pour your lemon mixture evenly over the top,
- Crumble the other half of oat mixture over the top of the lemon/condensed milk and return back to the oven,
- Bake for a further 20-30 minutes or until golden brown,
- Leave to cool to room temperate on a wire rack, then place in refrigerator for 1-2 hours or overnight,
- Remove from refrigerator and cut into squares and your ready to serve.
